Are you getting consistent results with your espresso? Are there times when the water flows faster and times when it flows slower? If your coffee is too fresh this might be a thing, but more likely you need to do a better job evening out the distribution of coffee grounds across the basket before tamping.
The more evenly you distribute the grounds, the more evenly water will flow through the bed of coffee. As a result, your extractions will be more balanced, repeatable and most importantly, delicious.
When it comes to distribution tools, there is no better bang for your buck, and most would say, more effective, than the Weiss Distribution Technique, or WDT. Not all tools are created equal, however, and if you have tried this technique before and had disappointing results, it was probably the tool at fault. Everything matters - needle thickness, stiffness, number, and array matter. Too much—even too few—of any and all of those, and you will struggle to have good results with the technique.
The Flair WDT Tool was designed with all of this in mind, as well as to be the perfect fit for all of our portafilters, from the NEO on up to the 58.
